Pinot Noir is a versatile red wine, so if you are confused with what food pairings will go with it, then I want to suggest that when you have a glass of wine, it is hard to go wrong, especially when it comes to cheese.
But there is a basic rule you should keep in mind when choosing the kind of cheese with any wine is that if your wine is too overpowering in taste, then go with a subtle or recessive type of cheese and if your wine is not dominating in taste and have mild flavors then go for a full dominating cheese.
Hard cheeses that will go well with Pinot Noir are Parmigiano Reggiano, Pecorino, Aged Manchego.
Semi-hard cheeses that will taste good are Cheddar, Gouda, Baby Swiss.
Semi-soft cheese would be Havarti, Fresh Mozzarella, Jarlsberg.
